What makes the perfect chilli?  Con or Sans carne?  Kidney beans or Pinto beans?  Cumin?  Coriander?

My partner makes a killer chilli with minced (ground) beef, 3 kinds of beans (pinto, kidney and haricot), at least two types of chillies - often small green AND scotch bonnet, and cumin, ground coriander, paprika, garlic, ginger.  It's yummy.

I enjoy small amounts of hard cheese such as parmesan as ingredients in cooking; and moderate amounts of goats cheese.  I try to avoid cheeses that are high fat and 'more-ish' - the sort you can't stop eating!
