I've been trying recipes with the spaghetti squash lately and am absolutely LOVING this vegetable. I tried it with a tomato sauce and ground chicken breast last week. This week I made it with EVOO (extra virgin olive oil) and parmesan shavings and it was DELICIOUS!!
All you do is pierce the squash in a couple of places and throw it in the microwave for about 9 minutes, take it out, cut it in half length wise, take the seeds out and then with a fork, take the meat of the vegetable out. Then add whatever you're eating it with and voila..an easy and highly nutritious meal!!
Per Wikipedia, spaghetti squash contains many nutrients, includingfolic acid,potassium,vitamin A, andbeta carotene. It is low incalories, averaging 42 calories per 1-cup (155 grams) serving.

This youtube video explains what I do quite well. I don't use butter like she does but you can basically do whatever you want with it once it's cooked!
